Enjoy these tasty, yet nutritious, chocolate recipes.


Chocolate Fondue with Fresh Fruit

3 ounces of semisweet chocolate bits
2 tablespoons of nonfat evaporated milk
1 tsp vanilla
1/4 tsp cinnamon
Cut-up fresh fruit: apples, pears, strawberries, bananas, oranges, pineapples

Directions

  1. Melt all ingredients, except fruit, in fondue dish.
  2. Dip fruit into chocolate.
  3. GO EASY ON THE CHOCOLATE!
Nutritional information :
Serving size: 1 cup of fresh fruit with just a thin coating of chocolate

Chicken Mole

8 boneless, skinless chicken breast halves
1/4 cup olive oil
4 ounces chopped green chilies
1 onion -- chopped
1 clove garlic -- minced
8 ounces tomato sauce
1 cup chicken broth
2 teaspoons chili powder
1 teaspoon salt
2 tablespoons sugar
1/4 teaspoon Tabasco sauce
2 whole cloves
1 ounce unsweetened baking chocolate
2 tablespoons creamy peanut butter

Directions
  1. Brown the chicken breasts in olive oil; set aside.
  2. Sauté onion and garlic.
  3. Add green chilies.
  4. Add remaining ingredients.
  5. Stir until chocolate is melted.
  6. Add browned chicken and cook over low heat for 30 minutes.

Indian Spiced Cocoa Chicken Salad

2 tablespoons ground cumin
2 tablespoons curry powder
1 teaspoon salt
1 teaspoon ground black pepper
1-½ tablespoons cocoa
1 tablespoon vegetable oil
6 boneless, skinless chicken breasts (5 oz. each)
¼ cup olive oil
½ cup apple cider vinegar
8 cups salad greens
1 large red bell pepper, cut into strips
1 large orange bell pepper, cut into strips
1 pint cherry tomatoes, cut in half
1 medium sliced cucumber, cut in half
12 radishes, sliced
1-½ cups couscous, cooked and cooled

Directions
  1. Heat oven to 350°F.
  2. Grease baking sheet.
  3. Stir together cumin, curry powder, salt, pepper and cocoa in small bowl; set aside.
  4. Rub chicken breasts with vegetable oil.
  5. Sprinkle 1 heaping teaspoon cocoa-curry mixture over each chicken breast reserving remaining spice mix (about 4 tablespoons) for dressing.
  6. Place coated chicken on prepared baking sheet.
  7. Bake 20 to 25 minutes or until juices are clear.
  8. Cool. Slice into strips; set aside.

Dressing
  1. Stir together remaining cocoa-curry spice mix, olive oil and vinegar in medium bowl until blended.
  2. Cover; refrigerate until chilled.
Makes about 1 cup dressing.

To Serve
  1. Divide salad greens among 6 salad plates.
  2. Arrange chicken slices, red peppers, orange peppers, cherry tomatoes, cucumbers, radishes, and cooled couscous on top of salad greens.
  3. Serve immediately with dressing.

Pumpkin Chocolate Brownies

1/3 cup firmly-packed brown sugar
1/3 cup Splenda
1/2 cup 100% pure pumpkin
1 egg
2 egg whites
2 tb canola oil
1/2 cup whole wheat flour
1/2 cup white flour
1 tsp baking powder
1 tsp baking cocoa
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp salt
1/4 tsp ground nutmeg
1/3 cup semi sweet chocolate mini morsels

Directions
  1. Preheat oven to 350 degrees F. Coat a 9 inch square baking pan with non stick cooking spray; set aside.
  2. In a large mixing bowl, combine brown sugar, Splenda, pumpkin, egg, egg whites and oil. Beat with an electric mixer on medium speed until blended.
  3. Add flour, baking powder, cocoa, cinnamon, allspice, salt and nutmeg. Beat on low speed until batter is smooth.
  4. Stir in chocolate chips.
  5. Pour into prepared pan and spread evenly.
  6. Bake for 15 to 20 minutes or until a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack.
  7. Cut into 2-inch squares.

Chili and Chocolate

10 ounces of ground turkey, soy meat crumbles or soy sausage crumbles or a combination of turkey and soy
2 cups chopped onion
1 large chopped green pepper
2 clove garlic minced
3 tbsp chili powder
2 tbsp brown sugar
1 tsp cumin
1 tsp pepper
1 tsp salt
1/4 cup tomato paste
2 (10-ounce) cans tomatoes
4 (15-ounce) cans of drained beans, black, kidney and/or pinto
2 oz. semi sweet chocolate

Directions
  1. Sauté onion, green pepper in large pot with nonstick vegetable spray.
  2. Add in turkey or soy meat and seasonings. Cook for 5 minutes.
  3. Add remaining ingredients.
  4. Cover and simmer under low heat for 3 hours.

Servings per recipe: 12 one-cup portions
